Herb Glossary-Bay: Used in soups and stews. Substitute: Thyme
-Basil: Vegetables great with tomatoes. Substitutes: Marjoram, Mint
-Cayenne Pepper: Obtained from small fruited varieties of capsicum. Is a dull red color. Used in small amounts in vegetables, meats, salad dressing and cheese.
-Chili Pepper: Dark Red contains antioxidants and may retard bacterial growth.-Chives: Good with salads and Cold Plates. Substitutes: Scallions & Green Onions
-Cilantro: Salsa, Asian & Caribbean Foods. Substitutes: Flat-leaf Parsley Spicy Basils
-Cinnamon: Tan brown in color. Contains antioxidants and may retard bacterial growth
-Cloves: Dark brown in color. Usually used in combination with other spices. Has a bitter flavor.
-Curry: Contains antioxidants and may retard bacterial growth
-Dill: Fish, Chicken, Eggs, Salads, Beans, Carrots, Cucumbers, Cabbage, Potatoes, Pickles & Sour Cream or Yogurt Dips. Substitute: Caraway
-Lemon Grass: Thai Dishes, Chicken, Beef, Curry sometimes combined with coconut milk. Substitute: Lemon Zest
-Lemon Verbana: Fish, Poultry, Marinades, Salad Dressings, Jams, Sauces, Teas Substitute: Lemon Grass & Lemon Zest
-Mint: Lamb, Eggplant, Desserts Teas, Salads, Vegetables, Fruits. Substitute: Spicy Basils
-Mustard: Young tender leaves are used for greens and for salads. Seeds are used as a ground spice in salads dressings, pickles, sauces, in some vegetables and cheeses.
-Oregano: Beef, Chicken, Pasta, Tomatoes. Substitute: Marjoram, Mint, Basil
-Parsley: Popular herb that can be used in variety of ways. Can be used in fruit and vegetable salads, in sandwiches, in soup and gravy.
-Pepper Grass or Cress: Can be used in salads and sandwiches.
-Sage: Poultry, Beans, Stuffing, Pasta. Substitute: Thyme, Summer Savory
-Tarragon: Chicken, Eggs, Fish Substitute: Anise, Fennel
-Sweet Basil: Flavor of cloves. Flavors salads, soups and meats.
